Veggie Taco Soup

I love soup all year long, no matter Winter, Spring, Summer or Fall at least once a week I need a good hearty soup. This is a favorite in my family and I am excited to share it with you all.


1 packet of taco seasoning

A little avocado oil to sear (any oil works)

1/3 cup chopped onion

1 tbsp minced garlic

1 sm can of diced green chilies

1/2 cup bell pepper

1 can diced tomatoes

1 can black beans

1 can pinto beans

2 cups of corn, I used frozen

1 32 oz of broth, I used beef, chikcen or veggie will work too.

Add salt, pepper, garlic powder and onion powder to taste. I always just sprinkle and taste the juice as I go.

Now let's cook!

STEP ONE: Add your oil, garlic, onion, & bell pepper.

Let it sear for about 5 minutes, while the oil is searing I add in pepper, sea salt, garlic powder and onion poweder.

STEP TWO: Add in your broth, I used beef, veggie or chicken is really good too!

NEXT: Add in tomatoes, black beans, chilies, corn, taco seasoning at this point I turn the heat up on high for about 10 minutes so everything can cook in.

Then I turn it on low to cook in slowly, like 15 minutes.

This soup is great to top with avocado, cilantro, jalaplenos, sour cream, cheese and tortilla chips! I hope you enjoy, if you do hashtag #PaigeWhatsForDinner
